AIR FRYER SCOTCH EGGS

Air fried scotch eggs is perfect for breakfast and brunch. It is very tasty and very quite simple to make! Cooking this in an Air Fryer makes a juicy meat with an appetizing crunchy crust. With every bite, there is a flavor bursting in your mouth.
3 tablespoons Greek yogurt
2 tablespoons mango chutney
1 tablespoon mayonnaise
⅛ teaspoon salt
⅛ teaspoon pepper
⅛ teaspoon curry powder
⅛ teaspoon cayenne pepper (Optional)
1 pound pork sausage
6 eggs, hard-boiled and shelled
⅓ cup flour
2 eggs, lightly beaten
1 cup bread crumbs
In a small bowl, mix yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne. Whisk evenly then set aside.
Divide the meat into six equal pieces. Flatten the meat and lay boiled egg in center and wrap sausage around the whole egg. Repeat for all eggs.
Preheat air fryer to 390 degrees F (200 degrees C) for 5 minutes.
Arrange three shallow bowls in an assembly line: flour, egg, and breadcrumbs. Dip eggs into flour, shaking off excess, then coat in lightly beaten eggs then roll on breadcrumbs to coat.
Using the cooking spray, sprinkle a little oil on the air fryer basket. Place scotch eggs in airfryer basket (do not overcrowd). Cook for 12 minutes turning once halfway through until golden brown.
Cut in half and serve with the dipping sauce.
