1 large zucchini
- 1 tps black pepper
- 1 tps kosher salt
- 3/4 cup of flour
- 1 cup of bread crumbs
1/2 parmesan cheese
- 2 eggs
Preheat the air fryer to 390°F(200°C) in 5 minutes.
Remove the zucchini's ends. Cut the zucchini into quarters lengthwise, similar to how you would cut french fries.
In a small bowl, combine the flour, kosher salt, and black pepper, and in a shallow bowl, combine the breadcrumbs and Parmesan. Get another bowl to beat the eggs in.
Coat the zucchini fries in the flour and shake off any excess. Then, dip in the eggs, allowing excess to fall off. Finally, coat both sides with the bread crumbs mixture.
Put the coated zucchini fries in an air fryer at 390°F(200°C) for about 10 minutes, then repeat with the remaining zucchini fries.
