Air Fryer Popcorn Chicken

Popcorn chicken can be addictive and yummy. Now you can make it healthier, moist and juicy on the inside, and crispy and crunchy outside. You will surely enjoy every bite.
1 cup cornstarch
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 teaspoon garlic powder
2 large eggs
½ cup buttermilk (120 mL)
2 ½ cups breadcrumbs (285 g)
1 lb Boneless, skinless chicken breasts. Cut into bite size.
Fresh parsley, chopped
Preheat the air fryer to 400°F for 5 minutes.
Place the chicken in a large bowl with the buttermilk. Leave some buttermilk for the breading. Coat evenly and leave it while you prepare your breading bowls.
Set up a medium-sized bowl and two small bowls for each breading part. On the medium size bowl, combine the cornstarch, salt, pepper, paprika, garlic powder, and chopped parsley.
On the small bowl, whisk the egg and mix with the remaining buttermilk. Use the other small bowl for the breadcrumbs.
Coat each piece in the cornstarch mixture and then dip them in the egg. Coat them with breadcrumbs and then they are ready to go in the air fryer.
To ensure they cook evenly, make sure there is space so the air can circulate. Don’t overcrowd the basket. Cook them for 10 to 15 minutes.
Serve this with BBQ sauce, honey mustard, sweet chili sauce, ranch, or ketchup. Enjoy!
