This easy and rich tender mushroom filled with cheddar and cream cheese will be devoured at any party. You can try any fillings but we have tried cream cheese and cheddar cheese for an umami flavor.
1 (16 ounce) Cremini or white button mushrooms with stems attached.
4 ounces cream cheese, softened
¼ cup finely shredded sharp Cheddar cheese
¼ teaspoon ground paprika
1 Pinch Salt
Clean the mushroom and remove the stems. Use a spoon to gently scrape out and discard the mushroom gills to make room for the stuffing. Pat the mushroom caps with paper towels to dry.
Mince scallions and separate white and green parts.
Preheat air fryer to 360 degrees F (182 degrees C).
In a bowl, combine cream cheese, cheddar cheese, ground paprika, the white parts from the scallions, pinch of salt.
Stuff filling into the mushrooms, pressing it in to fill the cavity with the back of a small spoon.
Spray the air fryer basket with a little oil using the cooking spray. Put the stuffed mushroom in the air fryer basket.
Cook mushrooms until filling is tender, the filling is hot, and tops are golden brown, about 8-10 minutes. Repeat with remaining mushrooms.
Let cool for 5 minutes before transferring to a serving platter. Sprinkle with the green part of scallions.
