AIR FRYER EGGPLANT PARMESAN

Eggplant is a super delicious, low-calorie vegetable you can use to add some variety and nutrition to any meal. Cooking it in an Air Fryer makes it crispy on the outside, silky smooth in the middle, and filled with rich flavor with no oil. It is just the best healthy dinner you can make for the whole family in under 20 minutes.
½ cup Italian bread crumbs
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon dried basil
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground black pepper
¼ cup flour
2 large eggs, beaten
1 medium eggplant, sliced into 1/2-inch rounds
1 cup marinara sauce, or more to taste
8 slices mozzarella cheese
Gather 3 medium sized shallow bowls. Place bread crumbs, Parmesan cheese, Italian seasoning, salt, basil, garlic powder, onion powder, and black pepper and whisk to combine. Place whisked eggs in the second bowl and flour on the third bowl.
Coat the eggplant with flour on both sides, then dredge on beaten eggs and lastly on the breadcrumbs mixture. Repeat until all of the eggplant slices are fully coated.
Preheat an air fryer to 370 degrees F (185 degrees C) for 5 minutes.
Place the breaded eggplant slices in the air fryer basket in a single layer.
Cook the eggplant for 10 minutes. Then flip the other side and cook for another 6 minutes - until it’s crispy and well-browned.
Once the eggplant is cooked, top it with the marinara sauce and mozzarella cheese. Cook for 2 more minutes to melt the cheese.
